اصطلاح سافت پیک و استیف پیک رو ممکنه شنیده باشید. این اصطلاحات برای زدن سفیده تخم مرغ و یا خامه به کار میره. اما اینا یعنی چی؟چقدر طول میکشه؟از کجا بفهمم. توی این پست قراره براتون با عکس توضیح بدم
پیک در انگلیسی به معنی قله است و به این دلیل این اصطلاح در قنادی کاربرد پیدا کرده که وقتی سفیده یا خامه رو میزنید بعد از بیرون آوردن مفتول همزن یه چیزی شبیه قله کوه برفی تشکیل میشه. حالا انواعش چیه:
۱) بدون پیک: به مرحله ای میگن که سفیده رو کمی زدیم و فقط خودش رو ول کرده و کمی کف کرده. اما هنوز به صورت مایع هست و فرمی نگرفته. در مورد خامه هم به همین صورته با این تفاوت که کف نمیکنه
۲) سافت پیک: به مرحله ای میگن که سفیده حالت خامه فرم گرفته پیدا کرده و رده های مفتول همزن روی سفیده و یا خامه میمونه. در این حالت اگر مفتول همزن رو از کاسه در بیارید و برعکس کنید یه قله تشکیل میشه که به سمت پایین هم میشه
۳) استیف پیک: به مرحله ای میگن که سفیده یا خامه کاملا سفت میشه و اگر مفتول رو از کاسه همزن بیرون بیارید و برعکس کنید نوک قله بالا میمونه و بر نمیگرده
هر رسپی که درست میکنید باید دقت کنید که کدوم مرحله از فرم دادن خامه یا سفیده مورد نیازه و باید دقیقا همون کار رو انجام بدید. مدتش هم به خیلی عوامل بستگی داره مثل دما، درصد چربی و ….
فقط مراقب باشید که بیش از حد نزنید چون سفیده خراب میشه و خامه هم تبدیل به کره میشه:)
