این نوکی پاریسی، در سس کره ای مریم گلی، بسیار سبک، پنیری و خوشمزه است. این نسخه از نوکی شباهت چندانی به نوکی سنتی ایتالیایی ندارد و بر اساس خمیری که برای پاف های خامه ای و اکلر ها استفاده میشود تهیه میشود. به نظر من درست کردن این نوکی از تهیه ی نوکی سیب زمینی خیلی راحتتره. اگر هیچوقت نوکی پاریسی رو امتحان نکردید الان وقتشه!
1.در یک قابلمه متوسط آب، کره، خردل دیژون، جوز هندی و نمک را مخلوط کنید و روی حرارت متوسط قرار دهید تا به جوش بیاید. وقتی کره آب شد آرد را اضافه کنید و با قاشق چوبی هم بزنید تا خمیر نرمی به دست بیاید. حرارت را کم کنید و به هم زدن ادامه دهید. تا زمانی بپزید که خمیر جمع شود.
2.از روی حرارت بردارید، پنیرها را به آن اضافه کنید و تا زمانی که مخلوط شود هم بزنید. تخم مرغ ها را یکی یکی به خمیر اضافه کنید. قبل از اضافه کردن تخم مرغ بعدی مطمئن شوید که تخم مرغ قبلی کاملا با مواد مخلوط شده باشد. در این مرحله اگر دوست داشتید میتوانید سبزیجات را اضافه کنید. خمیر را در قیف یکبار مصرف بریزید.
3.یک قابلمه آب را به جوش بیاورید و به آن نمک اضافه کنید. در این مرحله باید از دو دستتان استفاده کنید. از مواد داخل آب پایپ کنید و با چاقو به اندازه 2 سانت برش دهید و مستقیما داخل آب در حال جوش بیندازید. وقتی نوکی ها روس سطح آب آمدند، 2 دقیقه دیگر هم آن ها را بپزید. بعد با کفگیر نوکی ها را از آب خارج کنید و روی دستمال آشپزخانه بچینید.
4.در یک قابلمه نچسب، کره را با برگ های مریم گلی روی حرارت متوسط ذوب کنید. وقتی کره ذوب شد و برگ های مریم گلی ترد شدند نوکی ها را در کره بیندازید. تا زمانی که نوکی ها طلایی شوند یا به مدت 2 تا 3 دقیقه آنها را سرخ کنید. هنگام سرو روی نوکی ها پارمسان رنده شده بریزید.
