ایده فستیوال شکلات شبی بر سر شام به ذهن خانم Sylvie Douce که صاحب صاحب یک شرکت برگزار کننده مراسم و رویداد بود خطور کرد. او این ایده را با François Jeantet که یک آرشیتکت و نقد کننده غذا بود مطرح کرد. به هر حال هر دوی اونها شور و شوق یکسانی در مورد شکلات داشتند.
فکر نکنم جواب بده!!……. چه ایده خوبی…… چی؟یه فستیوال شکلات؟……
اینها جواب هایی بود که از افرادی که در این صنعت مشغول بودند شنیده می شد
سال ۱۹۹۵ – اولین فستیوال شکلات Salon du Chocolat در پاریس
با وجود اینکه افراد شاغل در این صنعت تردید هایی در مورد این کار داشتند، این دو نفر تصمیم گرفتند اولین فستیوال شکلات Salon du Chocolat را در ۲۸ اکتبر ۱۹۹۵ با مشارکت ۴۰ شرکت مطرح شکلات سازی در مرکز همایش های Eiffel Branly افتتاح کنند.
این رویداد با شرکت ۴۰ هزار بازدید کننده تبدیل به موفقیتی چشمگیر شد و امروزه این فستیوال در پاریس با ۱۱۰ هزار بازدید کننده و ۲۳۰ مشارکت کننده از سراسر جهان هر ساله برگزار می شود.
سال ۱۹۹۸ – نیویورک چطوره؟
در سال ۱۹۹۸ فستیوال شکلات در شهر نیویورک برگزار شد و همانند پاریس باز هم به موفقیتی چشمگیر تبدیل شد. شبکه های تلویزیونی بزرگ اخبار رویداد رو پوشش دادند و بازدیدکننده ها در صف های طولانی باعث ایجاد ترافیکی وحشتناک در تمامی محله منهتن شدند.
سال ۲۰۰۰ – مقصد بعدی توکیو
بعد از موفقیتی که در آمریکا به دست آمد برگزار کنندگان این رویداد تصمیم گرفتند به آسیا سفر کنند. جایی که بطور سنتی علاقه آنچنانی به شکلات و دسر نسبت به اروپا و آمریکا وجود نداشت و شکلات در واقع صنعت نوپایی به شمار می آمد. توکیو اولین مقصد برای این قاره کهن بود و در سال ۲۰۰۲ برگزار کنندگان این رویداد قراردادی با فروشگاه های زنجیره ای Isetan ژاپن امضا کردند تا این رویداد را به شهر های بزرگ دیگر ژاپن نیز گسترش دهند.
از آن زمان تا کنون این فستیوال سعی کرده است در شهرهای بزرگ فرانسه و دیگر کشورها این رویداد را برگزار کند. شهرهایی مثل مسکو، پکن، شانگهای، قاهره، لیما، سئول، هنگ کنگ، کلن، زوریخ، موناکو، بروکسل، لندن، مارسی، کن، لیون، تولوز، بوردو و ……
از زمان پیداش Salon du Chocolat تا کنون این فستیوال شکلات ۲۳۷ بار برگزار شده است و هر ساله در حدود ۱۵ رویداد در چهار قاره جهان برگزار می شود
