ابتدا کنجد را خوب تمیز کنید .و در تابه حرارت دهید تا خامی و رطوبت آن از بین برود
اگر قصد افزودن گردو را دارید انرا هم جدا یک کوچولو تفت دهید ( ترجیحا استفاده کنید)
داخل یک تابه تفلون شکر را ریخته و با شعله زیاد حرارت دهید تا شکر ذوب شود ...مواظب باشید نسوزد
حالا حرارت را کم کرده و تابه را مرتب تکان دهید تا حرارت یکنواخت به همه جا برسد شکر باید به رنگ کاراملی در بیایید
نکته : نیاز به هم زدن ندارد و نباید داخلش قاشق بزنید
یک سینی یا هر ظرف مورد نظر را کمی با کره چرب کنید و آماده نگه دارید
حالا کنجد تفت داده شده ، هل ، گردوی را اضافه می کنیم و در اخر کره هم بریزید
با قاشق چوبی هم بزنید و سریع روی ظرف چرب شده بریزد و با یک وردنه روی انرا صاف کنید ....ضخامت پشت زیک بستگی به سلیقه شما دارد .....ولی هر چه نازک تر باشد بهتر است
بعد از دو سه دقیقه انرا تا سفت نشد برش بدهید و با نوک چاقو از ظرف جدا کنید و در ظرف بچینید

یک شیرینی مناسب برای یلدا ، عید ، ماه رمضان ، دورهمی ، عصرانه با چای در زمستان حسابی می چسبه ( حالت تردد و شکلاتی دارد می توانید برای نرم شدن از شیره انگور استفاده کنید به جای شکر)
پیشنهاد: میتوانید گردو را روی کنجد ریخته و بعد وردنه بکشید تا کار زیبا تر شود
گردو را هم می توانید حذف کنید
پشت زیک یک شیرینی محلی مازندران است که در فارسی سوهان کنجدی هم می گویند
